This is the most popular breakfast in the States, but versions with bacon, fat sausages or jams are not quite good. Actually, pancakesserved in this way are a real caloric bomb. Too much calories, even for breakfast, are not good for your system. Surplus energy goes to fat. Knowing all this, we will show you a whole new refreshing way of cooking this traditional recipe.
- 2 cups of sifted flour,
- 2 and a half teaspoons of baking powder,
- 3 tablespoons of brown sugar,
- 2 eggs,
- 1 and a half of cup of milk,
- 2 tablespoons of melted butter,
- half a teaspoon of salt,
- 2 to 3 tablespoons of chopped almonds,
- 1 banana,
- 2 tablespoons of cranberries.
How to cook them?
In one bowl whisk together the eggs, milk, sugar and salt. In a separate bowl sift together flour and baking powder. Sugar and salt have just enough time to melt while you measure and mix the dry ingredients. Now, add the liquid ingrediants into the flour mixture and whisk until it all becomes nice and creamy. Add almonds and cranberries, whisk a little bit more and the batter is done. In the meantime, pre-heat the pan, spread it with butter, pour the batter for the first one and, right after that, put 4 or 5 banana slices inside the pancake 4 and cover them up with a little bit of batter. Wait for the bottom side to become brown and flip the pancake to the other side.
When you are done, serve them with a little bit honey, or maple syrup, sprinkle them with some icing sugar and the perfect breakfast is ready. Brown sugar gives the dish a lovely caramel taste, almonds give the crunchiness, cranberries the freshness and fried banana just tastes amazing. Absolutely beautiful. Cooking time 30 minutes.
