Salads are an amazing way to finish the day. They are light, low in calories, and if you add some kind of meat in, you will make a real meal. So, use quality meat because you do not need very much of it. As a result your evening meal will not be expensive. Also, when you use these kinds of meat, be carefulnot to overcook them. That would be a shame. Ok. Let's start cooking.
Ingredients (for two persons):
- 500 grams of lamb rump,
- 2 sprigs of rosemary,
- some lemon zest,
- 1 teaspoon of salt,
- 1 teaspoon of pepper,
- couple of tablespoons of olive oil.
- 2 tomatoes,
- 1 red onion,
- 1 handful of asparagus,
- 2 handfuls of rocket salad,
- 1 fresh red or yellow paprika,
- 2 tablespoons of good olive oil,
- some feta cheese,
- some lemon juice.

How to prepare everything?
Preheat the oven to 280°C. Chop rosemary leaves, add lemon zest, salt and ground pepper. Spread pieces of meat nicely with these spices. In a really hot pan add some olive oil and drop the meat in to fry until it becomes nice and brown on each side. We do not have to cook it in the pan, we just want to shock it a little bit and get a nice colour. We will finish it in the oven.
So, when the frying is done, put the meat in the oven for 10 minutes. Meanwhile, chop the tomatoes and olives and cut the onion in a very thin widgets. At the end, when the lamb in the oven needs 5 more minutes to cook, put the asparagus between the pieces cut and leave it to cook with meat.
Put all vegetables in a large bowl, season it with a pinch of salt and pepper, pour olive oil and lemon juice, put in the rocket mix all the ingredients together and wait for the meat. When time's up, remove it from the oven, cover it with aluminium film and leave it for 10 minutes to rest. After that, cutit in tiny slices and add the asparagus to the salad mixture, mix a little bit, add some feta crumbs on top and you are done. Serve it quickly to keep some warmness. You do not need more than 30 minutes to cook it.
