Beef Welington

beef wellingtonBeef welington is probably the best way to cook fillet steak and it so easy to prepare. Great opportunity to serve your family something extraordinary. You don't need to go to the expensive restaurants to have it. The original recipe contains foas grass which is delicious but very heavy, so we didn’t include that ingredient. Here we want a healthy meal, so check out our version.

  • 1 beef fillet (around 1 kg),
  • 3 tablespoons of olive oil,
  • 250 grams of mushrooms of your choice,
  • 1 large sprig of fresh thyme,
  • 12 slices of prosciutto,
  • 500 grams (1 pack) of puff pastry,
  • a little flour,
  • 2 egg yolks,
  • 2 cloves of garlic,
  • 300 grams of asparagus,
  • 1 tablespoon of mustard.
How to cook them?

First, heat the oven to 220°C. Put the beef in a very, very hot pan with olive oil and roast it for just a couple of minutes. You want it to have a nice brown colour on each side. When the beef is done, get it out and brush it with mustard and let it cool a little bit. Just enough time to prepare the mushrooms. Add them and garlic in food processor and make fine chopped mixture like breadcrumbs. Then put all that in a hot pan to fry until all the liquids evaporate. Just before everything is done add nice fresh thyme leaves. Leave everything to cool of.

Overlap two pieces of cling film over the chopping board. It makes rolling easier. Lay 12 slices of prosciutto on the film, arrange them that they can surround the fillet, lay them in a double row. Over the prosciutto and beef pour mushrooms . Roll it in a sausage shape and let it for 15 minutes in the fridge to shape up.

Roll out the puff pastry. Now you have to roll the already rolled beef with prosciutto in puff pastry. Use the film again and this time leave it longer in the fridge. This is best to do a day earlier and bake the beefthe next day. In that case, puff pastry has enough time to shape up and become almost one piece.

Heat the oven to 200°C. Brush the Wellington with egg yolk and bake until it becomes golden and crispy – around 25 minutes. When the time is up, get the dish out and let it rest for 10 minutes before you serve it with quick fried asparagus on olive oil - seasoned with salt and pepper. Cut the beef in thick slices. Cooking time 1 hour.
