Simple Corn and Couscous Salad

Simple Corn and Couscous SaladA great summer combination. Perfect for the end of the day. If you are busyyou do not have much time for cooking, so you need nice, quick and, of course, a healthy meal to eat before resting. This is so light, so tasty, so good, so healthy. You can cook it in 5 minutes. Dinner was never easier to prepare. Check out the ingredients and let's start cooking.

Ingredients (for two persons):
  • 2 corn cobs,
  • 250g of couscous,
  • 1 carrot,
  • 75 g of almonds,
  • 1 handful of coriander,
  • For dressing:
  • 3 tablespoons of neutral oil,
  • 2 tablespoons of lemon juice,
  • 1 teaspoon of cumin,
  • pinch of salt,
  • pinch of pepper.
How to cook it?

Let some salted water boil and then pour the couscous until the water covers it for a half inch in the bowl, cover it with a clean film and leave it for a while. Drop corn cobs in the boiling water and cook them for 3 minutes. After that take them out of the pot and leave them for a couple of minutes to cool down. In the meantime, make the dressing. In a small bowl add oil, lemon juice, cumin, salt and pepper. Stir and then it is time to put all the ingredients together and make the salad. Use a sharp heavy knife to cut kernels from the cobs, add couscous, grated carrot, almonds and handful of chopped coriander. Pour the dressing over the salad, stir a little and you are done. Serve it. On the video below, as you can see, Shef uses israeli couscous, but we recommend regular, because it easier to prepare.
