roasted chickenThis recipe comes from Italy, a country with probably the most amazing cousine in the world. It is very simple, easy to cook and even cheap. You only need a few ingredients to prepare this dish. Many people think that if you want delicious food, you need a lot of ingredients and spices. That is not true. Also, we will not use any fat in this dish , all is going to be cooked in their own juices. Check it out.

Main ingredients:
  • 1 chicken (from free range or organic if you can),
  • 2 lemons,
  • salt and pepper.

You see how simple it is?! We will serve this chicken with Greek salad and mashed potatoes.

Greek salad ingredients:
  • 3 tomatoes,
  • 1 cucumber,
  • 1 onion,
  • 100 grams of feta cheese,
  • 1 teaspoon of oregano,
  • 2 tablespoons of olive oil,
  • 15 olives.
Mashed potatoes ingredients:
  • 1/2 kilo of potatoes,
  • 1 garlic clove,
  • 1/4 nutmeg,
  • 1 tablespoon of butter,
  • 50 ml of milk.
How to cook everything?

Preheat oven to 350 degrees. Wash and then dry the chicken all over with cloth or paper towels. Sprinkle it with a lot of salt and black pepper. Wash the lemons and dry them, too and then roll them on the board by pushing with your hand. After that, puncture the lemons with toothpick and then put them in the bird, close up the opening – again using toothpick and that's it. Place it in the preheated oven and roast it for 30 minutes.

Next, peal the potatoes, wash them, chop them and put them to cook in salted water for about 25 minutes.

In the meantime, peel the cucumber and chop it in cubes, wash tomatoes and chop them in the same way. After that, slice the onions in the lobe shape and then feta cheese in medium cubes. Mix all the ingredients with pepper and salt, except cheese and seasonings mixture. At the end, add feta cubes on top, sprinkle with oregano and pour olive oil. Greek salad is done!

Potatoes are cooked too, so drain water and mash the potatoes with a mashing tool or with a fork. When you finish that, add the butter, fine chopped garlic, nutmeg and milk. Whisk all until becomes creamy.

When the bird is done, chop the meat and serve it with mashed potatoes and greek salad. All is done in 45 minutes. Enjoy your lunch!
